Grease traps and grease interceptors allow separation of solids and grease and contain them in an on-site holding tank or trap to prevent these EPA prescribed wastes from entering the main sewer system. Grease traps and grease interceptors are typically associated with food preparation facilities like restaurants, grocery stores or cafeterias. HOW DO GREASE TRAPS WORK?Grease traps are located between the source of the grease and the waste water sewage lines. With the high volume of the wastewater from the kitchen, a large amount of grease and other waste pass through the drain lines and into the grease trap. The grease trap separates grease and oil as well as solids. The trap allows the grease to float to the top and the solids to the bottom. GREASE TRAP CLEANINGGrease traps need to be pumped out and cleaned on a regular basis. The required frequency of grease trap pumping can vary greatly depending on the amount of waste produced.
